Spaghetti alla Vongole. Apologies for the ugly picture. What could be better than a steak recipe with a homemade barbecue sauce made with red wine?
Is red wine lovely with beef? Roasted Striped Bass with Red Wine Sauce. For the red wine sauce. Saint Julien Bordeaux.
You can keep the rest in the fridge overnight for the prunes to fully absorb the rich flavors. I love the idea of reducing the red wine into a sauce as well. I was a little intimidated at first. A truly decadent red wine reduction sauce with simmered cherries.

Everyone agreed that it was an excellent dish. This signature dish from the Le Marche region of Central Italy is often served as one of the pasta courses in many Italian homes. Is it a spoonful of tomato paste or a pinch of sugar? Butter mixed with herbs is another alternative that is different for pasta cooking.
Overall we were very happy with our meal. Pour in the red wine and simmer for an additional 10 minutes or so. Why do Tuscans view most tomato sauces as corruptions of what they view as a simple and essential dish? This is one of my favorites.
Parmagianno or Grana over the pasta is the final touch. This wine is best paired with a wide range of foods. I add a Tbsp of olive oil and a few shakes of hot red pepper flakes. Italian EVOO Vegetable oil.
